The Spring Seed Co ‘Cockscomb’ Cabernet Sauvignon 2021 is a certified organic, vegan-friendly red from McLaren Vale, made with minimal intervention. Hand-harvested and open-fermented in small vessels, it’s matured in predominantly older French and American oak for around a year. The result is a vibrant, medium- to full-bodied wine with aromas of blackcurrant, red berry, violet, and a hint of leafy herb. The palate is bright, structured, and elegant, with fine tannins and excellent length.
