Charles Oliver Wine Cabernet Sauvignon 'Shay's Flat' 2023, Organic, Vegan, Gluten Free - Pyrenees, Victoria
Fresh, savoury and finely structured, this organic Pyrenees Cabernet Sauvignon delivers cassis and blackcurrant with wild herbs, graphite and subtle cedar adding complexity. The palate is medium-bodied with bright acidity, fine-grained tannins and restrained seasoned-oak character, giving the wine freshness and shape without heaviness. Elegant, vibrant and quietly complex, it is a more energetic expression of Cabernet Sauvignon while still delivering classic varietal depth.
Food Pairing: Perfect with grilled lamb and rosemary, beef tenderloin, roast mushrooms, slow-cooked beef, aged cheddar and gouda.
