Rich, opulent and beautifully complex, this organic Pyrenees Sparkling Shiraz opens with blackberry, blood plum and cassis, layered with chocolate, mint, ripe berries and star anise. The palate is full and velvety, with a creamy mousse from extended lees ageing, fine structured tannins and subtle sweetness balanced by fresh acidity. Long, luxurious and deeply expressive, it finishes with excellent persistence and classic Australian Sparkling Shiraz richness.
